Slow Cooker Sweet Potatoes

Yields: 8 people
Ingredients:

6 medium (2 pounds) sweet potatoes or yams, peeled and cut into 1/2-inch cubes

1 1/2 cups organic applesauce
-
1/3 cup maple syrup
-
2 tablespoons coconut oil
-
1 teaspoon ground cinnamon
-
1/2 cup chopped walnuts, toasted
Directions:
-
Place sweet potatoes in 2 to 3 1/2-quart slow cooker.

Mix applesauce, maple syrup, butter and cinnamon together and spoon over potatoes.

Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.

Sprinkle with nuts and serve.
